Obama Cupcakes from Fluffy Thoughts Bakery

Story from the Washingtonian:

Obama Cupcakes are hot again. The Fluffy Thoughts Bakery in McLean, Virginia has been baking treats with Obama’s likeness since before the election, when she sold cupcakes to raise funds for his campaign. Now, with the election in the bag, she’s selling Obama cupcakes and cake toppers to inauguration-crazed crowds looking for a celebratory sugar rush.

A few inaugural-ball hosts have contacted Stuckey to make desserts for their events, and she’s taken tons of orders from private individuals hosting house parties to celebrate the inauguration.

Her most popular item is the Obama cupcake ($4). Using Shepard Fairey’s iconic Obama image, Stuckey and her small team of two create each Obama face out of white chocolate screened with the image.

According to the interview, Stuckey will take inauguration orders through Friday, but after that, she won’t be answering her phone. “We’ll be working around the clock this weekend, piping chocolate all night long,” she says. “I probably won’t want to see the stuff for at least a month afterward.”

INGREDIENTS
    • 24 chocolate Hershey’s Kisses or Hugs candies
    • Batter
    • 11⁄2 sticks (¾ cup) butter, softened
    • 1½ cups granulated sugar
    • ¼ cup unsweetened cocoa powder
    • 1 tsp baking soda
    • 1 tsp salt
    • 1 tsp vanilla extract
    • 2 large eggs
    • 1 cup buttermilk
    • 2 Tbsp (1 oz) liquid red food color
    • 2 tsp white vinegar
    • 21⁄2 cups cake flour (not self-rising)
    • Frosting
    • 2 bricks (8 oz each) cream cheese, softened
    • 1 stick (½ cup) butter, softened
    • 1½ cups confectioners’ sugar
    • 1 tsp vanilla extract
    • Garnish: heart-shaped decors
PREPARATION

    1. Heat oven to 350°F. You’ll need 24 regular-size (21⁄2-in. diameter) muffin cups lined with foil liners. Put 1 candy in center of each.

    2. Batter: In a large bowl with mixer on medium-high speed, beat butter, sugar, cocoa powder, baking soda, salt and vanilla 2 minutes until creamy. Beat in eggs, 1 at a time, until blended. Stir buttermilk, food color and vinegar in a 2-cup measure until well blended. With mixer on low speed, beat in flour in 3 additions, alternating with buttermilk mixture in 2 additions, beating just until blended. Spoon a scant 1⁄4 cup batter over candy in each cup, keeping candy in center.

    3. Bake 20 to 25 minutes until a wooden pick inserted in center of cupcakes comes out clean. Cool in pan on a wire rack 5 minutes, then remove from pan to rack. Cool completely.

    4. Frosting: Beat cream cheese and butter in a medium bowl with mixer on medium speed until smooth and creamy. On low speed, add confectioners’ sugar and vanilla. Increase speed to high and beat until smooth and fluffy.

    5. Frost cupcakes and sprinkle with heart-shaped decors. Refrigerate until serving.

    Planning Tip: Store unfrosted cupcakes covered at room temperature up to 1 day or freeze airtight up to 1 month. Thaw before frosting. Frost up to 1 day ahead.



Black Bottom Cupcakes

Ingredients

  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2/3 cup vegetable oil
  • 2 cups water
  • 2 tablespoons vinegar
  • 2 teaspoons vanilla extract
  • 1 (8 ounce) package cream cheese, softened
  • 1 egg
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

DIRECTIONS

  • Preheat oven to 350 F degrees. Line 24 muffin cups with paper liners.In a large bowl, mix together flour, 2 cups sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.
  • To make the filling: In a medium bowl, beat together the cream cheese, egg, 1/2 cup sugar and 1/4 teaspoon salt until light and fluffy. Stir in chocolate chips. Drop a heaping teaspoonful of the cream cheese mixture into each cupcake. Bake in the preheated oven for 25 minutes. Allow to cool.
Add desired frosting and EAT!
