Beginning April 8-15 Sprinkles Cupcakes will sell cupcakes for Passover.

Sprinkles has created a flourless Belgian dark chocolate cupcake topped with a Madagascar Bourbon vanilla bean glaze. The cupcake is topped with a blue Star of David.

The perfect cupcake to bring to a seder.

Passover is a holy holiday observed by Jewish people around the world in celebration of their Exodus from Egyptian slavery. Passover or Pesach means to "passover" and refers to the passing over of the Jewish homes when the Tenth Plague took the lives of the firstborn Egyptian sons.

Making cupcakes for Passover is a challenge because the commandments of the Torah (the sacred text of the Jewish people) prohibit eating any bread products or consuming wheat, oats, rye, barley and spelt. The rule was that anything made from these five (5) grains that could not be cooked within 18 minutes when coming in contact with water was forbidden. When the Jews left Egypt during the Exodus they did not have time to let their bread rise. Matzoh is a important symbol of Passover. It's permitted because it's not leavened bread.

Not only are leavened products banned during Passover, they are banned from the Jewish household. When I was a young girl living with my Bubby and Zaida, the days before Passover meant cleaning the entire house, especially the kitchen. We would remove all the dishes and kitchenware that had been used to bake with yeast and place them in the basement. A special set of dishes and a family seder plate was kept separate from our everyday set and used only during Passover.


Ingredients:
4 egg whites, room temperature
pinch of salt
1/2 cup sugar
1 1/2 cups shredded sweetened coconut
1/4 cup sugar
1/4 cup ground blanched almonds
2 tablespoons matzo cake meal
1/2 teaspoon grated lemon rind
Instructions: Preheat oven to 350° F. Line a twelve section muffin tin with paper muffin cups.

Beat egg whites with a pinch of salt until they hold soft peaks, gradually beat in 1/2 cup sugar. beat until the meringue holds stiff peaks and is smooth and shiny.

In another bowl, combine the shredded coconut, 1/4 cup sugar, the almonds, matzo cake meal and grated lemon rind. Gently fold the mixture into the meringue.

Fill prepared muffin cups 3/4 full of batter. Bake 20 to 25 minutes until golden brown and crusty on the surface. Store airtight for several days.

Easter Cupcakes

These are simple to make. You start with your favorite prepared and unfrosted cupcake.

RECIPE INGREDIENTS:
A cupcake (baked from your favorite recipe)
White icing
Shredded coconut
Pink decorators' sugar
Jelly bean nose
Chewable Sweet Tart eyes
Large marshmallow
Mini marshmallows

1. Frost a cupcake (baked from your favorite recipe) with white icing and sprinkle on shredded coconut fur.

2. Cut a large marshmallow in half widthwise. Squeeze each half slightly to give it an oval shape, then decorate the sticky side of each one with pink decorators' sugar and set them in place for ears.

3. Add a jelly bean nose and either jelly bean or snipped Sweet Tart eyes, and mini marshmallows for cheeks. For a finishing touch, draw on decorators' gel pupils or whiskers if you like.

Chocolate Nests with Eggs

These would be perfect atop your favorite flavored Easter cupcake.
Jordan Almonds or Jelly Beans would make perfect "Easter Eggs"

Ingredients:
    • 1 can (14 oz) sweetened condensed milk (not evaporated milk)
    • 2 cups (12 oz) semisweet chocolate chips
    • 2 cans (5 oz each) thin chow mein noodles
    • Fill with: egg-shaped Easter candies such as Jordan almonds
Preparation:

Line two baking sheets with foil. Lightly coat with nonstick spray.2. Scrape condensed milk into a medium saucepan or microwave-safe bowl; add chocolate chips. Place over low heat and stir often, or microwave on high 2 to 4 minutes, stirring every minute, until chips melt and mixture is blended and smooth. 3. Put noodles into a large bowl, pour on chocolate mixture and toss with a rubber spatula until noodles are coated.4. Drop generous 1⁄2 cups on prepared baking sheets. Lightly spray fingertips with nonstick spray. Form mounds into nests making a depression in the center to hold candies. Refrigerate 30 minutes or until set. Peel off of the foil; fill with candies.Planning Tip: The nests can be made up to 3 days before serving. Store loosely covered at room temperature.Recipe: Woman's Day

The sold-out cupcake challenge attracted a predominantly female crowd of 450 cupcake fans at the Renaissance Hollywood Hotel on Sunday, March 29th. Some of the attendees are still savoring their favorites from among the 34 varieties of the sweet treats entered in competition. They carried away dozens of cupcakes in bakery boxes from the tables of the cupcake competitors for their at-home consumption.

According to the Times reporter, some of the cupcake highlights included, "the white chocolate macadamia cupcake from Two Parts Sugar managed to melt the arteries of [this] die-hard white chocolate hater." Monica Serratos and her sisters are the owners and bakers of the favored Mission Viejo based cupcakery in south Orange County, California.

I was swooning over the Times photo gallery. The Sweet Potato Cupcake by Southern Girl Desserts caught my eye as did the Think Pink and Pina Colada cupcake display by Fairy Cakes Bakery, which Zen showcased in a previous blog post.

Notably absent from Sunday's challenge were the two icons of the industry. The event organizer Dan Silberstein explains: "I've never invited Sprinkles, and Crumbs never wants to compete. It'd be like Anheuser-Busch in a beer competition. They have nothing to gain because if they win, then it's like, of course, they're supposed to win. If not, then they lost to some no-name competitor."

We have to wait until Tuesday, March 31st to learn who took home top honors. No matter the official outcome, the event has been a marketing and public relations boon to the smaller cupcakeries. You can view the entire Times photo gallery and read the full article here.
